Milk that’s starting to spoil is an easy substitute for buttermilk in your relaxing morning meals, like pancakes, biscuits, and waffles. In fact, it has the same effect on your breakfast favorites as the classic pancake ingredient: it makes them fluffy. The mind behind this money-saving trick, Dana Gunders, the author of the Waste-Free Kitchen Handbook, says there is a line, though. If your milk is already curdled and separated, just toss it. If it simply smells funky, it’s good to use in your baked goods.
And if you notice your milk is ready for the pancake treatment on a Tuesday and you won’t have the time to whip up a fluffy stack until the weekend, simply pop the milk in the freezer. It will keep until you’re ready to use it.
