Chicken Caesar with Hard-Boiled Egg

Ingredients

  • 2 rotisserie chicken breast halves
  • 1 hard-boiled egg
  • 1/2 c. cherry tomatoes
  • 4 c. romaine lettuce
  • 1/4 c. Caesar salad dressing
  • 2 tbsp. grated Parmesan cheese

Instructions

Slice chicken breasts. Peel egg and cut into quarters. Halve cherry tomatoes.

In large bowl, toss tomatoes, lettuce, and dressing; transfer to 2 salad bowls. Divide sliced chicken and egg evenly between bowls. Sprinkle with grated Parmesan cheese. If desired, top with seasoned croutons.
