Ingredients

  • 1 1/2 lb. collard greens (6-7 cups)
  • 2 cloves garlic
  • 1 tbsp. olive oil
  • 1/2 c. red onion slivers
  • 1/2 tsp. pepper
  • 1 c. chicken broth
  • 1 tbsp. apple cider vinegar

Instructions

Chop collard greens; reserve. Peel and mince garlic.

Heat oil in large, deep skillet over medium heat. Add onion slivers, pepper, and minced garlic. Cook until onion is tender and garlic is fragrant, about 5 min., stirring occasionally.

Add half of collard greens to skillet; cook until greens are wilted, 1-2 min.; stirring. Add remaining greens; repeat cooking. Add broth; bring to a boil.

Reduce heat to medium-low; simmer until greens are tender, 20-30 min. Stir in vinegar and serve.
