Sweet Salsa-Topped Salmon

Ingredients

  • 1 (6 oz.) salmon fillet
  • 4 tsp. olive oil
  • 1 strawberry, diced
  • 1 tbsp. diced pineapple
  • 1 tbsp. honey
  • 1 tsp. diced jalapeño
  • 1 tsp. diced red onions
  • 1 tsp. lemon juice

Instructions

Prepare grill for direct heat cooking. Brush salmon with 2 tsp. oil; sprinkle with salt and pepper. Grill 6–8 min., until cooked through, turning once.

Combine remaining oil with last 6 ingredients; season with salt and pepper. Top with salsa. If desired, serve with rice. Serves 1.
