This Genius New Way of Eating Mashed Potatoes Will Forever Change Dinner

But the true secret to the perfect crunchy to creamy ratio is Jamie Oliver’s technique of mashing his potatoes halfway through the cooking process. Doing so increases the surface area of each potato, giving you more of a crust from the bottom of the pan.
