Although it’s doubtful many of us will ever be invited to have lunch with Kate Middleton, we can at least get a taste of what she’d put on the menu. Unsurprisingly, the duchess likes to keep her midday meals on the healthier side.
According to Hello! Magazine, Kate usually chows down on a nice salad for lunch. Watermelon salad is said to be one of her favorites, which is typically a simple mixture of the fruit with feta cheese, mint or basil, with extras like crunchy cucumber or avocado. She also likes tabbouleh, a Mediterranean bulgar-based salad, and ceviche, a marinated blend of seafood that isn’t technically a salad, but is just as refreshing.
The dishes are a slightly fancy twist on your usual plate of lettuce — and undeniably fit for a future queen. It also reminds us of the nutritious veggie wraps Princess Diana frequently requested from the royal kitchen.
When she isn’t digging into a salad, Kate previously revealed that Prince George and Princess Charlotte love cooking up cheesy pasta for her. The royal mom spoke about her kiddos culinary talents while visiting the Lavender Primary School in London back in 2019. “She was telling us how much her children love cooking and how they cook for her,” Matthew Kleiner-Mann (the school’s chief executive) explained. “One stirs the flour, one puts the milk and butter in.” George is a particularly big fan of pasta with spaghetti carbonara as his favorite meal.
Kate also isn’t one to turn down a sweet treat — especially when it comes to her favorite dessert, sticky toffee pudding. The recipe is similar to fruitcake, but with a creamy, buttery brown sugar sauce and clotted cream poured over the top. She clearly knows how to balance healthy meals with some indulgence now and then.
