Key Lime Margarita Cupcakes



  • 1 pkg. (16.5 oz.) yellow cake mix
  • 3 eggs
  • 1/2 cup water
  • 1 1/2 cups gold tequila
  • 1/3 cup oil
  • 2 Tbsp. key lime juice
  • 2 Tbsp. grated lime zest


  • 1/4 cup key lime juice
  • 2 Tbsp. grated lime zest
  • Basic frosting (recipe below)
  • Light green decorating sugar
  • Lime fruit candies cut into wedges


Prepare Cupcakes

  1. Preheat oven to 350°F. Line 18 muffin cups with cupcake liners.
  2. On low speed, beat cake mix, eggs, 1/2 cup tequila, 1/2 cup water, oil, lime juice until combined, 30 seconds.
  3. On medium speed, beat 2 minutes. Stir in lime zest.
  4. Divide among liners. Bake 18-20 minutes or until toothpick inserted into centers comes out clean.
  5. Immediately, using a fork, poke 6 sets of holes into the top of each cupcake. Brush the tops with remaining 1 cup of tequila.
  6. Cool 10 minutes. Remove from pans; cool on racks.

Prepare Frosting

  1. On medium speed, beat 1 1/2 cups butter (at room temperature) until fluffy, about 2 minutes.
  2. On low, gradually beat in 4 cups confectioners’ sugar.
  3. On low, gradually beat lime juice and zest into frosting until just blended.
  4. On medium-high, beat until fluffy, 2-3 minutes.
  5. Transfer to pastry bag fitted with medium star tip. Pipe frosting over cupcakes.
  6. Sprinkle edge of frosting with green sugar, and garnish with candies.

Makes 18 cupcakes.

Key Lime Margaritas


  • 1 Tbsp. light green decorating sugar
  • 1 Tbsp. kosher salt
  • light corn syrup
  • gold tequila
  • 1/4 cup key lime juice
  • 1/4 cup superfine sugar
  • 2 tsp. orange-flavored vodka
  • zest of 1 lime
  • ice cubes
  • lime slices to garnish (optional)


  1. On a plate, mix 1 Tbsp. light green decorating sugar and 1 Tbs. coarse kosher salt.
  2. Lightly brush rims of 2 margarita glasses with light corn syrup, then dip into sugar mixture. Dry upright.
  3. In blender, mix 6 Tbsp. gold tequila, 1/4 cup Key lime juice, 1/4 cup superfine sugar, 2 Tbsp. orange flavored vodka, and 2 tsp. grated lime zest. Add 3 cups ice cubes.
  4. Cover. Holding lid, purée mixture until smooth. Divide between glasses. If desired, garnish with lime slices.
