Common cooking knowledge states that potatoes need a good piercing before being put it the oven to cook faster, let steam escape, and keep from exploding. However, sweet potatoes end up losing both moisture and sugars (and aren’t as prone to explosions as you think) when they’re poked beforehand. This takes away from their sweetness and creaminess in the long run. At the end of the day, what’s the point of eating one if it isn’t actually sweet?
