Zesty Spinach and Tomato Omelet

Ingredients

  • 1 tbsp. olive oil
  • 2 c. spinach
  • 4 eggs, lightly beaten
  • 1 c. halved cherry tomatoes
  • 1 scallion, sliced
  • 1/4 c. shredded sharp cheddar cheese

Instructions

In nonstick skillet, heat oil over medium heat. Add spinach; cook, stirring, until just wilted, about 3 min.

Add eggs to skillet; cook, stirring, until just set in center, 4 min. Add tomatoes and scallion. Using spatula, fold omelet in half; top with cheese. Season to taste with salt and pepper.
