Made with whole-wheat flour and no-sugar-added jam, these treats are sure to fill your little ones’ hearts with joy and bellies with good-for-them nutrients
- 1 stick butter at room temperature
- 3/4 c. granulated sugar
- 1 tbsp. vanilla extract
- 2 eggs at room temperature
- 1 tbsp. cornstarch
- 1 tbsp. baking powder
- 2 c. white whole-wheat flour
- 1 tbsp. powdered sugar
- 1/4 c. no-sugar-added raspberry or strawberry jam
With electric mixer on medium speed, beat butter and sugar 2 minutes or until fluffy. Beat in next 4 ingredients. Reduce speed to low; beat in flour until incorporated. Form dough into disk; wrap in plastic and chill at least 1 hour.
Roll out dough between 2 sheets of wax paper to 1/4-inch thickness. Chill 30 min. With 2-inch heart cutter, cut out 24 cookies, rerolling scraps. With 1/2-inch heart cutter, cut out centers of 12 cookies. Place on lined baking sheets.
Heat oven to 350 degrees Fahrenheit. Bake 10 min. Let cool. Using sieve, dust cutout cookies with powdered sugar. Spread flat side of uncut cookies with 1 teaspoon jam; sandwich with cutout cookies.
