Soft & Chewy Peanut Butter Cup Cookies

Perfect for a crowd of sweet-tooths, these bite-size cocoa cookies are topped with a nugget of melt-in-your-mouth peanut butter cup candy!

  • 1 c. sugar
  • 1/4 c. shortening
  • 1/4 c. butter at room temperature
  • 1 egg
  • 3/4 c. buttermilk
  • 1 tsp. vanilla extract
  • 2 c. sifted all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 24 miniature peanut butter cups chopped into pieces


Beat sugar, shortening, and butter in large mixing bowl until creamy. Beat in egg; stir in buttermilk and vanilla. 

In another bowl, sift together flour, cocoa, baking soda, and salt; stir into batter. Cover and refrigerate 1 hour.

Preheat oven to 350ºF. Coat baking sheets with cooking spray.

Drop dough by teaspoon-fuls 2" apart. Bake 8-10 minutes.

While cookies are still warm, press chunk of peanut butter cup into center of each, being careful not to push all the way through the cookie.
