A Dessert That’s Good for You? Yes, This Yogurt Mini Bundts Recipe Does It All

We use nonfat Greek yogurt for a daily dose of protein and probiotics

Lately I’ve been craving healthier versions of my favorite desserts. And this mini yogurt bundts recipe is my new go-to. You won’t find a more delightful and guilt-free way to indulge your sweet tooth. Packed with protein and calcium thanks to the non-fat Greek yogurt base, they offer a healthier alternative to traditional cakes. Each bite is a satisfying blend of tart lemon curd, creamy yogurt and crushed shortbread cookies. Enjoy it as a light breakfast or a light dessert. For an extra dose of nutrition, consider adding chopped nuts, fresh berries or chia seeds for a boost of fiber and omega-3s.

When I made this yogurt mini bundts recipe, I swapped out some of the sugar for applesauce. This reduces the refined sugars and adds natural moisture. Ingredients

  • 1½ cups nonfat Greek yogurt, at room temp.
  • ¼ cup sugar
  • 1 vanilla bean, split, scraped
  • 2 (¼ oz.) envs. unflavored gelatin
  • 1½ cups whipped cream
  • 1 (12.7 oz.) jar lemon curd
  • 24 shortbread cookies, finely crushed
  • 6 Tbs. butter, melted

In bowl, mix yogurt, sugar and vanilla bean seeds. In 1-qt. microwave-safe bowl, stir 2 Tbs. water into 1 env. gelatin; let stand 5 min. Microwave until melted, 10 sec. Stir in 1 cup yogurt mixture. Stir gelatin mix back into remaining yogurt mixture. Fold in cream.

• Divide among 12 greased silicone mini Bundt molds. Chill 2 hrs. In bowl, mix curd and 1/4 cup water. In 1-qt. bowl, stir 1/4 cup water into 1 env. gelatin; let stand 5 min. Microwave until melted, 10 sec. Stir into curd mix. Divide among molds. Chill 1 hr. Mix crumbs and butter. Press over filling. Chill; unmold.
