Herbed Peppercorn Roast Beef

  • 3 tbsp. Montreal steak seasoning
  • 1 tbsp. chopped fresh sage
  • 2 tsp. mixed peppercorns crushed
  • 1 tsp. chopped fresh rosemary
  • 1 tbsp. olive oil
  • 5 lb. boneless beef rib roast


Heat oven to 350 degrees Fahrenheit. In small bowl, combine steak seasoning, sage, crushed peppercorns, and rosemary. Brush oil over beef; coat evenly with seasoning mixture. Place beef in roasting pan. 

Roast beef one hour, 45 min to two hours until meat thermometer inserted into thickest part registers 135 F for medium-rare. Transfer beef to carving board and loosely tent with foil. Let beef stand 15 minutes before slicing. Garnish with fruit and herbs as desired.
