  • 1 (16 oz.) pkg. refrigerated Italian-style meatballs
  • 1 (24 oz.) jar chunky garden combination pasta sauce
  • 1/2 tsp. ground cumin
  • 2 cups (2”x3/4” pieces) peeled butternut squash
  • 4 eggs
  • 1/4 cup toasted panko
  • Chopped fresh parsley (optional)

Coat large nonstick skillet with cooking spray; heat over medium heat. Add meatballs; cook, turning occasionally, until browned, 5–6 min. Transfer to bowl; discard pan drippings.

Add sauce to same skillet; stir in cumin. Add squash; bring to boil. Reduce heat to medium-low. Cover; cook until squash is tender, 20 min., adding meatballs back to skillet during last 10 min. of cooking.

Using back of spoon, make 4 indentations in sauce; crack 1 egg into each indentation. Cover; cook until egg whites are no longer wet, 4–5 min. Sprinkle with panko. If desired, sprinkle with chopped parsley.
