A medley of mixed veggies gives a deliciously healthy new twist to this comfort-food favorite.
- 1 tbsp. olive oil
- 1 1/2 lb. ground turkey
- 1 onion chopped
- 2 tbsp. chili powder
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (15 oz.) can tomato sauce
- 2 c. frozen mixed vegetables such as broccoli, carrots, and corn, thawed
- 1 c. grape tomatoes
- 3 c. cooked rice
Heat oil in large nonstick skillet over medium-high heat.
Add turkey and onion; cook, stirring occasionally, until turkey is no longer pink, 6-7 min.
Add chili powder, salt, and pepper; cook, stirring occasionally, until fragrant, about 2 min.
Stir in tomato sauce. Cover; reduce heat to medium.
Cook, stirring often, until flavors blend, 30 min.
Stir in vegetables and tomatoes. Cover; heat through, 5-10 min. Serve with rice.
