Turkey Bolognese

One Italian dish that’s always a hit is spaghetti Bolognese, and to amp it up we used leftover turkey and dressed-up marinara sauce.

Ingredients

  • 2 Tbs. olive oil
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 3 cups shredded cooked turkey (dark meat preferred)
  • 1 (24 oz.) jar marinara sauce, such as Newman’s Own
  • 1 (14.5 oz.) can diced tomatoes
  • ½ cup shredded carrots
  • ½ cup minced jarred roasted red peppers
  • Pinch of red pepper flakes
  • ¼ cup chopped basil
  • 12 oz. spaghetti

Instructions

  1. Heat oil in large, deep skillet over medium heat. Add onions and garlic; cook 5 min. or until translucent. Add turkey and cook 1 min. Stir in marinara sauce, diced tomatoes, shredded carrots, roasted red peppers and pepper flakes; bring to a boil. Reduce heat to medium-low and let simmer 15 min. or until flavors have blended, stirring frequently. Stir in chopped fresh basil; season to taste with salt and pepper. 
  2. Meanwhile, cook pasta as package directs. Drain, reserving 1 cup cooking water. 
  3. Add pasta to Bolognese sauce and toss well, adding enough reserved cooking water to moisten. Serve immediately with shaved Parmesan, if desired.
