Our quick-cooking fresh cherry tomato sauce packs plenty of zesty flavor thanks to savory garlic, tuna, and capers.
- 8 oz spaghetti
- 1 tsp oil
- 2 c cherry tomatoes
- 1 tsp minced fresh garlic
- 1/2 tsp dried oregano
- 1 can tuna in water, drained
- 1 tbsp drained capers
- Freshly ground pepper and shaved Parmesan, optional
Cook pasta in boiling salted water according to package directions; drain, reserving 1/2 cup cooking water. Return pasta to pot.
Meanwhile, coat large nonstick skillet with cooking spray; add oil. Heat over medium heat; add tomatoes. Cook, stirring occasionally, until tomatoes start to soften, about 5 min. Add garlic and oregano; cook, stirring, 1 min. Stir in tuna and capers.
Stir tuna mixture into reserved pasta, adding a little of reserved pasta water if necessary to thin sauce. If necessary, re-heat over low heat. If desired, serve sprinkled with pepper and cheese.
