Dijon Green Beans with Bacon

Smoky bacon, fresh lemon, and zesty mustard give quick-cooking green beans an easy gourmet upgrade.

Ingredients

  • trimmed
  • 3 strips bacon
  • 1 tbsp. Dijon mustard
  • 1 tbsp. fresh lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. olive oil
  • optional

Instructions

Bring large pot salted water to boil over medium-high heat. Add green beans; cook until just tender, 5 minutes. Drain well. 

Meanwhile, in nonstick skillet, cook bacon over medium heat, turning, until crisp, about 8 minutes. Transfer to paper towels to drain. When cool enough to handle, break into pieces; reserve.  

In bowl, whisk together mustard, lemon juice, salt and pepper until salt is dissolved; whisk in oil until blended. Add green beans; toss until coated. Transfer to serving bowl; sprinkle with bacon. If desired, serve with lemon.
