Our holiday-perfect roast gets plenty of lively flavor thanks to a colorful mix of herbs and spices.
- 3 tbsp Montreal steak seasoning
- 1 tbsp chopped fresh sage
- 2 tsp mixed peppercorns, crushed
- 1 tsp chopped fresh rosemary
- 1 tbsp olive oil
- 5 lb boneless beef rib roast
Heat oven to 350 degrees Fahrenheit. In small bowl, combine steak seasoning, sage, crushed peppercorns, and rosemary. Brush oil over beef; coat evenly with seasoning mixture. Place beef in roasting pan.
Roast beef one hour, 45 min to two hours until meat thermometer inserted into thickest part registers 135 F for medium-rare. Transfer beef to carving board and loosely tent with foil. Let beef stand 15 minutes before slicing. Garnish with fruit and herbs as desired.
