Orange Chocolate Macadamia Biscotto

This keto biscotto, courtesy of recipe developer Chelsea Cohen of SlimFast, proves that you don’t have to give up your sweet tooth just because you’re on the keto diet.

Ingredients

  • 2 c. almond flour
  • 1 tbsp. coconut flour
  • 1/8 tsp. sea salt
  • 1/8 tsp. baking soda
  • 2 tbsp. orange juice
  • 1 tbsp. maple syrup
  • 1/2 tsp. orange extract
  • toasted
  • 1/4 c. unsweetened chocolate chips
  • 1/2 tsp. stevia

Instructions

Heat oven to 350 degrees Fahrenheit. 

In a food processor, combine almond flour, salt, and baking soda.

Pulse in orange juice, maple syrup, stevia, and orange extract until dough forms.

Work macadamia nuts and chocolate chips into dough evenly and form dough into two even logs. 

Transfer to a parchment lined baking sheet.

Bake for 18-22 minutes until bottom is golden brown.

Remove from oven and cool 1 hour on a cooling rack. 

Cut on diagonal into ¼-inch thick slices.

Place slices on a parchment paper lined baking sheet and bake each side for 5-7 minutes more.

Cool for 30 min and serve.
