Sage Potatoes Au Gratin

For the ultimate in comfort food, Food Network star Sunny Anderson bakes sliced potatoes to tender perfection in sage-infused heavy cream.

Ingredients

  • Butter
  • 2 c. heavy cream
  • 10 fresh sage leaves
  • 3/4 tsp. kosher salt
  • peeled, cut into 1/8" slices
  • cayenne pepper
  • 4 tbsp. + 1/3 c grated Manchego cheese

Instructions

Heat oven to 400°F. Butter 8" square baking dish.

In pot, combine cream, sage, and 1/4 tsp. salt. Over low heat, bring to a simmer; heat 10 min.

Layer 1/3 of potatoes in bakin gdish. Season with 1/4 tsp. salt and a pinch of cayenne; sprinkle with 2 Tbs. cheese. Repeat once; top with remaining potatoes and salt.

Strain cream; discard sage. Pour over potatoes, pressing potatoes down. Dot with 1 Tbs. butter; cover with foil. Bake 1 hr. 10 min. 

Uncover and sprinkle with remaining cheese. Bake 20 min. until tender and brown.
