At my house, fresh veggie dishes are a must. And whether it’s for a tasty side or meatless main, I’m always looking for delicious ways to prepare them. That’s what inspired our test kitchen pros to come up with these 3 Vegetarian Delights recipes. Vegetable-Stuffed Tomatoes are extra-hearty filled with peppers, zucchini and barley — one makes a great side, or serve two for a lovely lunch. Acorn squash and sweet potatoes come together in our Roasted Root Vegetable Winter Salad that’s so yummy you’ll want to make it all year round. And even meat-lovers will flip over simply satisfying Vegetable Tacos (not just on taco Tuesdays)!
