These Girl Scout Samoas S’mores Aren’t Just Good—They’re Glorious (And Made for ‘Lazy’ S’mores Lovers)

Whether you’re a Girl Scout thin mints gal or prefer the caramel chocolate chip flavor, there’s no denying that these cookies are a classic for a reason. But did you know they’re even tastier with a twist? It turns out that using samoas (or caramel deLites) in your standard s’mores recipe takes them to new ooey-gooey heights. Better still, they come together super fast even without a campfire—which is why I consider them “lazy s’mores”. Keep reading for the recipe so you can whip up samoa s’mores as a speedy sweet treat.

What are samoa s’mores?

First thing’s first: s’mores-flavored Girl Scout cookies do exist—but they’ll be discounted after the 2025 cookie season. Also, I’d argue they don’t compare to the taste of a freshly toasted, melty marshmallow sandwiched between two caramel de lite (aka samoa) cookies. These cookies replace the typical graham cracker ingredient to make an even sweeter, easier-to-assemble treat. You get to skip the step of breaking apart chocolate bars since the cookies already have a layer of chocolate on the bottom.

A decadent samoa s’mores recipe

This samoa s’mores recipe from the Creme de la Crumb food blog uses the chocolate and coconut-infused cookies to elevate a quick dessert.

Samoa S’mores

Ingredients:

Directions:

  • Active: 5 mins
  • Total: 10 mins
  • Servings: 6 s’mores (2 per person; 3 servings)
  1. Depending on cooking method, place each marshmallow on skewer (metal or wood) for fire-roasting, baking sheet for broiling or on plate for microwaving.
  2. Toast marshmallows by roasting over open fire, grill or gas stove about 10 seconds; microwaving on plate on high 8 to 10 seconds; or broiling on baking sheet about one minute. Regardless of cooking method, cook marshmallows until fully toasted and golden brown. Be sure to watch marshmallows so they don’t burn.
  3. To assemble s’mores: Place one cookie upside down and put toasted marshmallow on top of upside down cookie. Top marshmallow with second cookie (right side up) and press down gently to squish marshmallow between cookies. Enjoy!

I was a Girl Scout as a kid, and I’ve eaten plenty of caramel de lites in my day, so I was surprised by how much yummier these cookies were as s’mores. The cookies’ sweet and nutty flavor pairs perfectly with the smoky sugar of the marshmallows, and the marshmallows’ gooeyness is held together well by the sturdy, crumbly cookies. These s’mores give the traditional version a run for their money, and definitely earn my Girl Scout badge for “most delicious campfire snack.” I’d eat them in front of a campfire or the TV.
