Welcome to the Westgate River Ranch Resort and Rodeo in Florida—a place brimming with charm, heart, heat and everything any wannabe cowgirl or cowboy could dream of. To experience the resort in full, we recommend staying in one of their cozy wagons. Each one offers plenty of space to sit back and relax, a gorgeous patio with stunning river views and—thank goodness—great air conditioning to beat that Florida summer heat. For activities, don’t miss the petting zoo and waterpark. Both are family-friendly and guaranteed to put smiles on everyone’s faces. Speaking of family-friendly fun, the rodeo happens every Saturday and holds the title of the most consecutively running rodeo in the country—a true Florida tradition! Finally, be sure to go horseback riding. This author had the pleasure of riding a sweet horse named Frankie who, like her, has eye issues and wears a protective face covering to shield his eyes from the sun. It was a heartwarming reminder that everyone—even horses—deserves a little extra care. Can’t make it to the campfire! Don’t worry! You can make delicious s’mores at home!
Classic s’mores

- 2 graham cracker squares
- 1 large marshmallow
- 1-2 pieces milk chocolate (from a Hershey’s bar)
Break graham crackers in half to create squares. Place chocolate on one graham cracker half. Roast marshmallow over campfire or fire pit until golden brown and gooey, rotating slowly. Place hot marshmallow on top of chocolate-covered graham cracker. Top with second graham cracker and gently press down to create a sandwich. Let cool for a few seconds before enjoying. Serves 1.
