Here’s how to transform your Thanksgiving leftovers:

First, you’ll need to gather your leftover stuffing, one egg, two mashed sweet potatoes (or russet, if you prefer), leftover turkey breast, and whatever side you want to go in the sandwich.

Next, combine the stuffing and egg and mix well. You’ll want to make sure the consistency is almost doughy and sticks together. Divide into two portions and press them into compact circles to form a patty. You can use a plate to guide you, just put foil underneath the stuffing so you can easily transfer it to the waffle iron.

Once your waffle maker is hot, spray it with cooking spray and place one of the patties on it. Press down slightly when you close the top and allow the stuffing to cook to a golden brown. Repeat this step with the next patty for the next sandwich.

Then, assemble! Cut one patty in half and spread the sweet potatoes before topping them with turkey. Add the gravy, cranberry sauce, and green beans (at least that’s what I did) or whatever sides you want. Serve immediately and enjoy!
