Hearty Detox Chili Recipe
This easy and slimming dish is family-friendly and packs nicely for lunch!
- 11⁄2 lbs. grass-fed ground beef
- 2 tsp. minced garlic
- 2 Tbs. clarified butter or ghee
- 1 large onion, diced
- 2 stalks celery, chopped
- 3 carrots, peeled and chopped
- 3 Tbs. chili powder
- 3 medium zucchinis, chopped
- 3 (8 oz.) cans seasoned tomato sauce
- 15 oz. diced tomatoes
Makes 8 servings.
- Brown beef and garlic; drain excess fat and set meat aside.
- To skillet, add ghee, onion, celery, carrots and chili powder; cook until onions are golden, 5–7 min. Add zucchini; stir for 2 min. Add beef, sauce and tomatoes; season with salt and pepper.
- Bring to a boil, then simmer 20 min., stirring occasionally.
