Whitney Lounsbury on the Sweet Taste of Belonging: How a Visionary Mom Reimagined Dessert for Everyone

No one should be left out of a celebration because of what they can’t eat. This idea enabled Whitney Lounsbury, founder of Butter Baked Cake Co, to reimagine how dessert can be done for the modern, health-conscious world. Committed to inclusion, accessibility, and integrity, she built a brand that began with a challenge close to home.

Years ago, Lounsbury navigated an intense period of medical uncertainty with her then-five-year-old son. After countless doctor visits and difficult diagnoses, she decided to eliminate inflammatory ingredients from his diet in hopes of improving his quality of life. This meant no gluten, sugar, grains, or seed oils.

Circumstances were hard enough at home. However, things came to a breaking point when the birthday party season arrived. Lounsbury’s son, a kindergartner, was invited to every classmate’s party. The thought of sending him into a room full of cupcakes, unable to eat a single one, was unbearable. She wasn’t willing to let him sit on the sidelines of childhood, so she rolled up her sleeves and got to work.

Lounsbury, already a passionate home baker, transformed her kitchen into a full-fledged research lab. Although she has been gluten-free for years, this new challenge was more complex. Countless experiments turned into inedible messes. Still, a mother’s love and a healthy dose of culinary curiosity led to something special: a delicious cupcake free of grain, sugar, gluten, and seed oil. She discovered that freezing the treats can maintain freshness and consistency, opening up possibilities for what she can create.

The health of Lounsbury’s son stabilized and her daughter was born, but she found herself standing at a crossroads. She had a thriving career in New York City’s fashion industry, leading a high-performing sales team and mastering the art of brand and community building. However, when she looked at the joy her desserts brought her family and the lack of comparable products in the market, she felt pulled in a new direction. Lounsbury didn’t take the leap for profit but for purpose.

Lounsbury had to bootstrap Butter Baked Cake Co from the ground up. Without outside investors and shortcuts, she fulfilled her mission of bringing joy back to the table for families like hers. She started selling at events and farmer’s markets, forming friendly relationships with customers along the way.

“I got an email from a woman who said, ‘I know this sounds dramatic, but I finally feel like I can be a part of the world again.’” Lounsbury recalls. “She avoided social events for years because of her dietary restrictions. That message, those exact words, were what I felt when I started all this for my own son.”

Lounsbury’s principles are baked in every cake, cookie, and muffin at Butter Baked Cake Co. She doesn’t only remove harmful ingredients but replaces them with joy. “I don’t think of what people are giving up, more like what they’re getting back: a birthday candle moment, a slice of holiday pie, and a chance to feel included,” she remarks.

It’s worth noting that as a single mother, Lounsbury is especially passionate about supporting other founders from underrepresented or disadvantaged backgrounds. Her leadership is collaborative, a natural extension of her experience in sales and her instinct for community. She credits her ability to think strategically, pivot quickly, and build strong relationships as primary factors in her business’ steady growth.

Butter Baked Cake Co didn’t skyrocket overnight, and Lounsbury is glad it didn’t. “We could have grown faster, but growing slowly gave us the foundation to do things right,” she says. Today, her brand has multiple sales channels, including direct-to-consumer shipping, retail grocery distribution, and military base partnerships.

Whitney Lounsbury aims to continue making decisions anchored in ethics. This means partnering with brands and suppliers she respects, using compostable packaging whenever possible, and building a business that future generations can be proud of. With this ethos, she wants customers to focus on what they gain: desserts that taste incredible, nourish the body, and allow everyone, no matter their dietary needs, to be part of life’s sweetest moments.
