Air Fryer Sweet Potato Cubes

Ingredients:

  • 1 large sweet potato, or 2 medium spuds
  • 1 Tbs. olive oil
  • 1 tsp. brown sugar (optional)
  • ½ tsp. salt
  • ½ tsp. dried parsley
  • Fresh parsley for garnish (optional)

Directions:

  • Yield: 3 servings
  1. Preheat air fryer to 400F.
  2. Peel and slice sweet potato into ½ inch cubes. (Note: You should have approximately 2 to 2½ cups of sweet potato cubes.)
  3. Place sweet potato cubes into large mixing bowl. Add seasonings and oil to spuds then toss to coat. Add coated potatoes to greased or lined air fryer basket in single layer.
  4. Cook 8 to 10 minutes, shaking basket halfway through. Remove potatoes from air fryer. Repeat process with any remaining potatoes.
  5. Sprinkle cubes with parsley (if desired) and serve warm.
  6. Note: Store leftover sweet potato cubes in an airtight container in the fridge for up to 5 days.
