Ingredients:

  • ½ Tbs. olive oil
  • ½ cup yellow onion, finely diced
  • ½  cup bell pepper, finely diced
  • 2 lbs. 80/20 lean ground beef
  • 1 cup crushed Ritz crackers
  • 2 eggs, whisked
  • 1 cup sharp cheddar cheese, shredded
  • ½  cup whole milk
  • 1 tsp. salt
  • ¼ tsp. black pepper

Topping

  • ½ -¾ cup ketchup
  • 2 Tbs. brown sugar
  • 1 tsp. yellow mustard

Directions:

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings
  1. Preheat oven 350°F.
  2. Sauté the diced peppers and onions in a small pan with the olive oil until softened, about five minutes. Then, set aside and let cool.
  3. Combined the whisked eggs, crushed crackers, onions, bell peppers, cheese, milk and salt and pepper in a large bowl.
  4. Add ground beef and mix until just combined. Then, form it in a loaf and place into a loaf pan.
  5. Bake the meatloaf for 30 minutes. Meanwhile, combine the topping ingredients in a bowl and set aside.
  6. Remove the meatloaf and brush on the topping. Bake for an additional 30 to 40 minutes. Remove once it reaches 155°F.
  7. Let the meatloaf rest for 15 minutes in the loaf pan prior to slicing it, until it reaches 160°F. Serve immediately.

Storing and reheating notes

If you have leftovers (or want to make this meatloaf ahead of time), proper storage is key to keeping it fresh. Once your copycat Cracker Barrel meatloaf has fully cooled, wrap it tightly in plastic wrap or aluminum foil and store it in an airtight container in the refrigerator for up to four days. For longer storage, you can freeze individual slices by wrapping them in plastic wrap and placing them in a freezer-safe bag.
