What is bubble pizza?
Bubble pizza is fun to say out loud and even more fun to make. Similar to a “pizza casserole,” this dish trades in traditional pizza dough for biscuits, which when cut into pieces, create a “bubble”-like appearance. The biscuit pieces are covered with sauce, cheese, meat and toppings and then baked in a casserole pan to golden perfection. It’s easy to love biscuits. They’re light and fluffy on the inside, crispy on the outside and bursting with buttery, salty flavor. Biscuits come prepared in many ways: topped with gravy or fruit jam, made into a breakfast sandwich or paired with fried chicken. But using them as pizza dough? A staple of Southern cuisine, biscuits are a flour-based baked bread made with baking powder instead of yeast. Because of this, they are a type of quick bread, meaning they don’t need time to rise before baking.
So, what makes biscuits great for pizza? “Biscuit dough is an interesting alternative to pizza dough because it is so much more buttery and flakey in texture,” says Claire Rifkin, MS, RDN, a woman’s health dietitian at Claire Rifkin Nutrition, LLC. She explains that baking soda or powder “create a soft and tender crumb that can contribute to the ‘cloud’ or ‘bubble’ like texture this trend is going viral for.” Additionally, “because biscuits are typically made with butter and pizza dough is made with oil, there is a rich buttery flavor profile.”
Tips for making bubble pizza

1. Cut biscuits with kitchen shears
Instead of a knife, “use kitchen shears to cut up your biscuits,” says Mittenberger. “Simply spritz the blades with nonstick cooking spray to keep them from sticking.”
2. Personalize toppings
Feeding a crowd? Miltenberger suggests “personaliz[ing] the toppings to your crew: Add pepperoni to one section and crumbled sausage and peppers to another, then let guests pick and choose their perfect portion.”
3. Use pre-made biscuit dough

Cheesy one-pan bubble pizza recipe
To spice up your pizza night rotation, add bubble pizza for an instant hit. This easy recipe from The Recipe Critic bakes in 30 minutes and features Pillsbury dough biscuits, spicy pepperoni and shredded Colby Jack cheese.
Ingredients:
- 1 can pillsbury regular biscuits (not grand), cut into fourths
- 1 cup pizza sauce
- ¼ cup parmesan cheese
- 1 tsp. Italian seasoning
- ½ tsp. garlic, powder or fresh
- 1 cup pepperoni, cut into fourths
- 2 cups Colby Jack cheese
Directions:
- Total time: 30 minutes
- Yield: 8 servings
- Preheat oven to 350°F. Spray a 9×13″ casserole or baking dish with cooking spray and set aside.
- In a medium bowl, combine biscuits, pizza sauce, parmesan cheese, Italian seasoning, garlic, and pepperoni.
- Spread in an even layer along the bottom of the baking dish and try not to overlap.
- Top with shredded cheese and bake for 15-20 minutes, or until biscuits are puffy and cheese is bubbly.
