Air Fryer Eggplant Parmesan 

Ingredients:

  • 1 eggplant, sliced into ½-inch rounds
  • ¼ cup all-purpose flour
  • 2 eggs
  • ½ cup panko breadcrumbs
  • ¼ cup Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup marinara sauce
  • ¼ cup mozzarella cheese

Directions:

  • Yield: 2 to 4 servings
  1. Slice the eggplant into ½-inch rounds. Sprinkle some salt on both sides of the eggplant slices. Let it release moisture for 30 minutes.
  2. Add flour in one bowl and whisk eggs in another bowl. In the third bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper.
  3. Pat the eggplants dry with a paper towel.
  4. Preheat air fryer to 370°F.
  5. Coat the eggplant slices first in flour, then dip it in eggs and finally coat it with bread crumbs mixture.
  6. Place the coated eggplant in the preheated air fryer basket. Let it air fry for 8 to 10 minutes, flipping them halfway through cooking.
  7. Once eggplants are crispy enough, top it with marinara sauce, mozzarella cheese and Air fry for another 1 to 2 minutes or until the cheese is melted.
  8. Top it with fresh parsley or basil and enjoy it warm!
