During the long winter, I crave cozy comfort foods that make me feel warm and toasty. But now that spring is upon us, I’m looking for dishes that are a touch lighter yet just as satisfying. So, when our pros wrangled up these Healthy Meal Prep recipes, I was thrilled. This Tuna, Vegetable and Grain Salad is a snap to make with bottled vinaigrette. Toss it together the night before—the flavors get better the longer it marinates. Next, with fire-roasted tomatoes, avocado, black beans and plenty of spice, this Quinoa Black Bean cheesy Enchilada Skillet is a vegetarian dinner winner. Truth be told, this time of year there can still be some dreary days and this Mexicali Turkey Chili, a lightened up version of a classic one-pot meal, will really hit the spot.
