That’s what makes this Mexicali turkey chili recipe such a winner. It preps in just 30 minutes, and after 20 minutes on the stove it’s ready to eat. A delicious, super-satisfying dinner in less than an hour — you can’t beat that! For our recipe, we start with ground turkey instead of ground beef for a healthier spin. Then we add beans, corn, peppers, and mushrooms and let it all simmer together. The clever time-saving secret to this dish? Baked beans, which add flavor and cook up fast. Once the chili is done, top it with a big dollop of sour cream and enjoy. You’ll even have leftovers for another dinner!

- 1 Tbs. oil
- 1 large onion, chopped
- 1 cup diced green pepper
- 1¼ lbs. ground turkey
- 2 (22 oz.) cans baked beans, such as Bush’s Grillin’ Beans
- 1 can (11 oz.) Mexicorn, drained
- 1 cup minced mushrooms
- ½ cup chopped fresh cilantro
- ½ cup sour cream
Instructions
PrintIn pot, heat oil over medium heat. Add onion and pepper; cook, stirring often, until tender, 5–8 min. Add turkey; cook, stirring occasionally, until no longer pink, about 5 min. Reduce heat to medium-low. Add beans, corn, mushrooms and cilantro; simmer until flavors blend, 20 min. Top with sour cream.
