Shay Spence’s Chicken Chili Tot Pie Is Comfort Food Done Right

Ingredients
- 1 Tbs. olive oil or neutral oil
- 1 large yellow onion, chopped
- 2 medium poblano peppers, chopped
- Kosher salt, to taste
- 1 lb. ground chicken or turkey
- 1 tsp. garlic powder
- 1 Tbs. ancho chili powder
- 1 (15.5 oz.) can spicy chili beans with juices
- 1 (28 oz.) can diced tomatoes with green chiles
- 1 lb. frozen tater tots
- 9 oz. block sharp cheddar, shredded
- Your favorite chili toppings, such as diced raw onion, pickled jalapeños, cilantro, sour cream and more cheddar
Instructions
PrintHeat oven to 375°F. To large oven-safe skillet or sauté pan over medium heat, add oil, onion and poblano peppers and season with salt to taste. Cook for 6–8 min., until onion is slightly softened.
Add chicken, garlic powder and chili powder and cook for 6 min., crumbling meat with back of spoon or potato masher, until browned.
Add beans and tomatoes and let simmer for another 10 min., then remove from heat. Season with more salt to taste.
Top with frozen tater tots and transfer to oven. Bake for 25 min., until crispy. Top with cheddar and return to oven for another 8–10 min., until cheese is melted and bubbling around edges. Serve with your desired toppings.
