Ingredients

  • THE SAUCY PEANUT:
  • 1/4 cup unsweetened natural peanut butter
  • 2 Tbs. soy sauce, or tamari for gluten-free
  • 1 Tbs. pure maple syrup
  • 1 Tbs. apple cider vinegar or rice vinegar
  • 1 tsp. sriracha (optional)
  • 1/2 tsp. ground ginger
  • 1/2 tsp. garlic powder
  • 3 Tbs. warm water, to thin
  • ----------------------------------------
  • LETTUCE WRAPS:
  • 2 oz. dried ramen, vegan chow mein noodles or soba noodles
  • 1 cup frozen edamame, thawed
  • 1 red bell pepper, seeded and sliced thinly
  • 1/2 red onion, sliced thinly
  • 1 medium carrot, peeled, grated
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup chopped fresh cilantro (optional)
  • 3/4 cup The Saucy Peanut (recipe above)
  • 1 large head butter lettuce, broken into about 12 cups

THE SAUCY PEANUT: Combine ingredients in bowl or jar and mix until smooth, adding warm water to thin, a Tbs. at a time, until sauce reaches desired consistency.

LETTUCE WRAPS: Cook noodles as per package directions. Drain cooked noodles and rinse with cold water, then set aside.

Combine edamame, bell pepper, red onion, carrot, peanuts, cilantro (if using) and noodles in large bowl. Pour dressing on top, and toss. Divide mixture evenly among lettuce cups. Serve immediately.
