Turkey Tacos Recipe is a Fiesta of Flavor

Taco Tuesday is my favorite weeknight. Tacos are flavorful, fun to eat and fast and easy. Instead of ordering out, I like to make my own and I’m always looking for new taco fillings to try. That’s how we came up with this turkey tacos recipe. It uses ground turkey instead of ground beef, which means it’s healthy and yet just as tasty. We cook it with taco seasoning, salsa and beans to make a quick chili. Then we stuff the taco shells with red cabbage for color and crunch, avocados for creaminess, fresh tomatoes and lots of cheese. For the finishing touch, sprinkle on some cilantro, add a squeeze of lime and dinner is served! These tacos are so delicious and satisfying that your crew will want every night to be taco night!

Ingredients

  • 1 lb. ground turkey
  • 1 Tbs. Mexican seasoning, such as McCormick Mexican Taco Truck
  • 1 (15.5 oz.) jar medium salsa
  • 1 (15.5 oz.) can red kidney beans, rinsed, drained
  • 8 Stand ’n Stuff taco shells, heated
  • 1 cup finely shredded red cabbage
  • 1 avocado, pitted, peeled, diced
  • 2 tomatoes, diced
  • ½ cup shredded Monterey Jack cheese
  • ⅓ cup fresh cilantro leaves
  • ⅓ cup taco sauce
  • Lime slices (optional)

Coat large skillet with cooking spray; heat over medium-high heat. Add turkey and Mexican seasoning; cook, stirring often, until turkey is browned, 5 min. Stir in salsa, beans and 1⁄2 cup water. Bring to a boil; reduce heat to medium-low. Cover; cook, stirring occasionally, until mixture is flavorful, about 20 min. Uncover; cook until thickened, about 5 min.

Dividing evenly, fill taco shells with cabbage, turkey mixture, avocado, tomatoes, cheese and cilantro. Serve with taco sauce and, if desired, lime slices for squeezing over tacos.
