Eggnog gingerbread tiramisu is a no-bake delight that uses these ingredients to make a sweet and airy treat. You can prepare a single pan of this tiramisu or whip up individual-sized portions. It will last a couple of days tucked away in the fridge, but it may not last that long because it’s so good. Here’s the scoop on eggnog gingerbread tiramisu along with two ways you can make it at home.

What is eggnog gingerbread tiramisu?

This tiramisu follows a similar preparation as the traditional version: coffee-dipped cookies are layered with mascarpone cheese mixture before the dessert is chilled and sprinkled with cocoa powder. But, what makes it different is that gingerbread cookies are used in place of ladyfingers and eggnog is incorporated into the mascarpone mixture. These ingredient swaps create a tiramisu with all of the sweet and spiced flavors of the holidays.

Key step to ensure a fluffy eggnog tiramisu

Whipping the ingredients for the mascarpone mixture makes the final dessert light and airy. However, adding the eggnog too early could prevent ingredients like the heavy cream from forming stiff peaks. So, it’s best to gently incorporate it at the end of the mixing process to maintain the mixture’s fluffiness.

How to make eggnog gingerbread tiramisu

This eggnog tiramisu recipe comes from the 60s meal YouTube channel and is a great way to use up those sweet holiday staples. Eggnog Gingerbread Tiramisu

Ingredients:

  • 2 cups heavy cream
  • 3 egg yolks
  • 1¼ cups powdered sugar, sifted
  • 2¼ cups mascarpone cheese, softened
  • ½ cup eggnog 
  • 14 to 18 (about 4-inch) gingerbread men cookies
  • ½ cup strong black coffee 
  • 1 Tbs. rum
  • Garnishes: unsweetened cocoa powder, chocolate sprinkles and/or gingerbread men cookie crumbs

Directions:

  • Yield: 12 servings
  1. Whip cream in large bowl until stiff peaks form and set aside. 
  2. In large mixing bowl using a handheld or stand mixer fitted with a whisk attachment, beat egg yolks and sugar on medium-high speed until it’s getting white and creamy and sugar is completely dissolved for about 2 minutes. Add mascarpone and mix until combined. Add ¼ cup of eggnog and mix on low speed until creamy. Save rest for the coffee. Fold in ¼ of whipped cream with a spatula. Add 2 Tbs. of mascarpone cream to 9-by-7 inch casserole dish and spread evenly on bottom.
  3. In small bowl, stir together coffee, eggnog and rum. Dunk gingerbread men cookies on both sides into coffee mixture and arrange about 7 to 9 gingerbread men cookies (depending on size of the cookies) on cream in casserole. Spread half of the cream on top. Repeat one more time ending up with a layer of cream on top. Pipe remaining whipped cream on top. Cover with plastic wrap and let chill in the fridge overnight. Sprinkle with cocoa on top before slicing and serving. 
  4. Note: Store leftovers in an airtight container in the fridge for up to 2 days.
