But when the temperature rises outside, who wants to heat up the kitchen for hours while baking your dreamy confection? Instead, put your freezer to work with a batch of frozen mini cheesecakes. Tricks to make them extra easy and delicious
The perfect mini cheesecake starts with the perfect crust. And Woman’s World test kitchen director Susan Chiusano says you can transform almost any kind of cookie crumbs into a crisp crust by simply mixing them with a little melted butter and pressing the mixture firmly into the bottom of your muffin wells. Susan likes graham cracker crumbs for a classic flavor, but you can use gingersnaps, Nilla wafers, shortbread cookies or even sandwich cookies such as Oreos. Simply crush yourself, then mix with enough melted butter so the crumbs stick together.
And for a lightened up version of these bite-sized delights, Susan suggests swapping in a little Greek yogurt for some of the cream cheese.
