1. Completely drain excess fat from the ground beef.
Ree’s recipe includes ground beef for an extra filling dip. So, it’s best to sauté the beef until it’s fully browned and then drain it well so no excess fat remains. This prevents the dip from becoming greasy.
2. Cook the mixture on a gentle heat.
Once all of your ingredients are added, allow the mixture to cook over a low heat. Doing this ensures the mixture maintains its creaminess and doesn’t break—which can result in clumps of cheese.
3. Make sure the dip stays warm.
Keeping your prepared dip heated retains its luscious texture. To do this, simply place it in a slow cooker on low where it will stay warm for two hours.

Rotel Dip

Ingredients:
- 1 Tbs. olive oil
- 1 lb. ground beef
- 1 yellow onion, diced
- 1 (2-lb.) block processed cheese (such as Velveeta), cubed
- 2 (10-oz.) cans diced tomatoes and green chilies (such as Rotel)
- ½ tsp. chipotle chile powder
- Chopped fresh cilantro, for serving (optional)
Directions:
- Active: 20 mins
- Total time: 20 mins
- Yield: 16 servings
- In a large nonstick skillet, heat the oil over medium heat. Add the beef and onion and cook, breaking up the beef with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Once browned, drain off any excess fat.
- Reduce the heat to low and add the processed cheese, tomatoes and green chiles, and chile powder. Cook, stirring constantly, until the cheese melts and the dip is smooth and combined, 2 to 3 minutes. Sprinkle with cilantro, if you like. Serve with tortilla chips.
