Spiced Apple Parfait

Ingredients
- 2 soft oatmeal cookies (finely crumbed)
- 2 tsp. butter (melted)
- 1 apples (peeled, cored and cut into ½” pices)
- 1/3 cup dried currants
- 1/4 cup maple syrup
- 1 tsp. ground cinnamon
- 1/4 cup toasted slivered almonds
- 1 cup vanilla Greek yogurt
Instructions
- Mix cookies and mutter until crumbly. In large nonstick skillet, mix next 4 ingredients and ¾ cup water; over high heat, bring to boil. Cover; over medium-low, cook until apples are tender, 8-10 min.
- Uncover; cook until thickened, 5 min. Cool. Stir in almonds. Serve over yogurt topped with crumbs.
