Super Keto Sample Menu

Breakfast: Super Muffins — Mix 12 eggs, 10 oz. spinach, 1⁄2 cup almond milk, 1⁄2 cup goat cheese, 2 Tbsp. collagen and salt. Bake in muffin tin at 375 degrees Fahrenheit for 20 minutes. Makes 6 servings.

Lunch: Tuna Salad — Mix 5 oz. tuna, 1⁄4 cup avocado-oil mayo, half a diced bell pepper, 1 Tbsp. collagen, Dijon mustard, and seasoning to taste. Serve over salad.

Snack: Nut Bombs — Melt 1⁄2 cup each nut butter and coconut oil. Add 15 drops stevia, 2 tsp. vanilla, and 2 Tbsp. cocoa. Freeze in a candy mold. Makes 12 servings.

Dinner: Keto Kebabs — Marinate 5 oz. chicken cubes and 2 cups veggies chunks in olive oil and spices. Thread on skewers and grill until chicken cooks through.

Takeout-style Beef & Broccoli Keto Recipe

Ingredients

  • 1⁄4 cup coconut aminos  
  • 2 Tbsp. white wine  
  • 2 Tbsp. apple cider vinegar  
  • 2 Tbsp. ghee  
  • 1 Tbsp. coconut oil  
  • 2 tsp. minced garlic
  • 1⁄2 tsp. red pepper flakes  
  • 1 lb. beef rib-eye, in strips  
  • 1 head broccoli, in pieces  
  • 1 Tbsp. toasted sesame seeds

Makes 2 servings.

Instructions

  1. In slow cooker, whisk coconut aminos (a gluten-free soy sauce alternative), wine, vinegar, ghee, coconut oil, garlic, and red pepper. 
  2. Stir in beef until coated. Cover and cook on low six to eight hours. 
  3. Add broccoli an hour before serving. Garnish with sesame.
