Coconut Joy Truffles — Mix together 6 Tbs. shredded coconut, 1⁄2 cup superfine almond flour, 1⁄4 cup melted coconut oil, 2 Tbs. Swerve, and 1⁄8 tsp. coconut extract. Chill until firm. Roll into 8 balls and dredge each in more coconut.
