What are churros?

Churros are long sticks of choux pastry dough (also used for eclairs and cream puffs) that are fried and tossed in cinnamon sugar. Spain is considered to be the birthplace of churros, though you can find them sold warm at carnival or amusement park concession stands and frozen at many grocery stores. Making churros takes some effort as you have to make the dough, place it in a piping bag and fry the sticks in batches. How churro cookies are made

These cookies start with a dough made with butter, sugar, flour, eggs and other baking staples. The dough is scooped into balls and baked until the cookies are golden brown and tender. To infuse the cookies with the sugary and fragrant flavors of churros, most recipes call for tossing them in cinnamon sugar. It’s important to do this step at the right stage of the baking process so the spiced sugar melds properly with the buttery cookie.

Unlike actual churros, you don’t want to toss these cookies in cinnamon sugar after they’re baked. Amy Hand, contributing writer at The Skillful Cook, explains that doing so won’t allow the sugar to properly stick to the cookie. Also, you risk breaking your freshly baked soft cookies. “I recommend rolling your balls of dough into the cinnamon sugar before placing them on the baking sheet so the sugar can bake in and become crunchy,” she says. This simple step goes a long way for whipping up a yummy batch of churro cookies.

Simple Churro Cookies

This Churro Cookies recipe comes from Norah Clark, pastry chef and food editor at Boyd Hampers, and gets a quick dusting of cinnamon sugar before they’re baked to soft and chewy perfection.

Ingredients:

  • 2¾ cups all-purpose flour 
  • 1 cup granulated sugar + ¼ cup for coating
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 large egg 
  • 1 tsp. vanilla extract 
  • 1 tsp. baking powder 
  • ½ tsp. salt 
  • ½ tsp. cinnamon

Directions: 

  • Yield: approximately 24 cookies
  1. Preheat oven to 350°F. Line baking sheet with parchment paper. 
  2. For cookie dough: In bowl, cream together butter and 1 cup sugar using wooden spoon or electric hand mixer. Beat in egg and vanilla. In separate bowl, whisk together flour, baking powder and salt. Gradually add this to wet mixture, mixing until dough forms. Set aside.
  3. In small bowl, mix ¼ cup sugar and ½ tsp. cinnamon for coating. 
  4. For coating cookie dough: Shape dough into 1-inch balls and roll each one in cinnamon-sugar mixture. Then, place dough balls on prepared baking sheet, leaving enough space between them.
  5. Bake 10 to 12 minutes until edges golden. Remove from oven and let sit a few minutes on baking sheet before transferring to wire rack to cool. Serve.
