Chocolate Turkey Cookie Stacks

Ingredients

  • ¼ tsp. + ⅛ tsp. tylose powder
  • ¼ cup orange fondant
  • ¼ cup yellow fondant
  • ¼ cup red fondant
  • Cornstarch
  • Light corn syrup
  • 2 cups light cocoa candy melts
  • 12 regular Oreo cookies
  • Orange and yellow nonpareil sprinkles and jimmies
  • 1 tube (4.25 oz.) black decorating icing, fitted with writing tip
  • White confetti sprinkles
  • Orange and red gumdrops
  • 12 mini Oreo cookies

Instructions

  1. Line baking sheet with wax paper. One at a time, knead ⅛ tsp. tylose powder into each color of fondant. Lightly knead colors of fondants together to marble slightly.
  2. On surface lightly dusted with cornstarch, roll out fondant to 1/16″ thickness. Using 2½” daisy-shaped cutter, cut out 12 shapes, re-rolling as necessary. Transfer to baking sheet; dry overnight. 
  3. For feathers, attach 2 daisy cutouts together with dot of corn syrup. Return to baking sheet; dry 20 minutes.
  4. Line another baking sheet with wax paper. Microwave candy melts in wide microwave-safe bowl according to package directions; reserve 2 Tbs. melted candy. Working with one cookie at a time, drop 6 regular Oreos into remaining candy to cover completely; using fork, lift cookie from candy, letting excess drip off. Transfer to baking sheet. For sprinkle-coated Oreos, dip remaining Oreos, then, while still wet, cover with desired sprinkles and jimmies. Transfer to baking sheet; refrigerate until set, 15 minutes.
  5. For eyes, pipe icing pupils on confetti sprinkles. For beaks, cut small pieces from orange gumdrop and for waddles, cut pieces from red gumdrops. For faces, with reserved candy melts, attach eyes, beaks and waddles to 6 mini Oreos. Attach faces to plain chocolate-dipped Oreos.
  6. For eyes, pipe icing pupils on confetti sprinkles. For beaks, cut small pieces from orange gumdrop and for waddles, cut pieces from red gumdrops. For faces, with reserved candy melts, attach eyes, beaks and waddles to 6 mini Oreos. Attach faces to plain chocolate-dipped Oreos. With candy melts, attach feathers to Oreos. Refrigerate until set, 15 minutes.  
  7. To support turkeys, with candy melts, attach remaining mini Oreos to sprinkle-coated Oreos about ¼” from edge; refrigerate until set, 10 minutes. With candy melts, attach turkey bodies to sprinkle-coated Oreos, leaning against mini Oreos. Refrigerate until set, 15 minutes.
