Ingredients
- 20 mint Oreo cookies
- 1 (15.25 oz.) pkg. triple chocolate cake mix
- 3 eggs
- 1/2 cup oil
- 1 (8 oz.) pkg. cream cheese, at room temp.
- 2/3 cup confectioners’ sugar
- 1/2 tsp. peppermint extract
- 1 1/2 cups heavy cream Green food coloring
- 1/4 cup chocolate sauce
Instructions
PrintHeat oven to 350°F. Line 24 muffin cups with liners. Chop 8 cookies; halve remaining 12. On medium speed, beat cake mix, eggs, oil and 1 1⁄4 cups water until combined. Fold in chopped cookies. Divide batter
among liners. Bake until pick inserted comes out clean, 20 min. Cool
On medium, beat cream cheese, sugar and extract until smooth. On low, beat in cream. On medium, beat until stiff; tint with coloring. Spoon on cakes; chill. Drizzle sauce over. Top with halved cookies.
