Meatball Chili Recipe Is a Tasty Twist on a Comfort Classic + It’s Less Than $2 a Serving

A big pot of chili is perfect for feeding a gang of people, for game day — or any time! But sometimes you want something a little more surprising to tantalize your taste buds. For our Meatball Chili recipe, instead of simply browning the beef as usual, we form it into tender spiced-right orbs of deliciousness. Best of all, this dish is super-simple to put together — and costs just $1.66 a serving.

Let’s face it, store-bought meatballs are convenient. But it’s so easy to make your own. And it’s fun to customize them with other ingredients. For a fiery kick, we stir some of the chili powder that’s essential in the sauce right into the meat mixture. You can also add ground cumin, chopped sun-dried tomatoes or fresh herbs. Ingredients

  • 1 lb. ground beef
  • ¼ cup seasoned dry breadcrumbs
  • 1 egg
  • 1 clove garlic, minced
  • 2 tsp. chili powder
  • ¼ tsp. salt
  • 1 (15.5 oz.) can kidney beans, rinsed, drained
  • 1 (15 oz.) can tomato sauce
  • ¾ cup frozen corn, thawed
  • 1 (4 oz.) jar diced pimentos, drained
  • Fresh cilantro and lime wedges

Instructions

In bowl, combine beef, breadcrumbs, egg, garlic, 1 tsp. chili powder and salt. Shape into 16 meatballs. Coat 12" nonstick skillet with cooking spray; heat over medium heat. Add meatballs; cook, turning, until browned, 7–8 min. Remove meatballs; drain fat from skillet.

Return meatballs to skillet; add beans, tomato sauce, corn and remaining 1 tsp. chili powder. Over medium-high heat, bring to a boil; reduce heat to medium-low. Cover; cook meatballs until no longer pink in centers, about 10 min. Sprinkle with pimentos. Garnish with cilantro and limes.
