Ereka Vetrini’s strawberry, cucumber and quinoa salad is summer on a plate. This vibrant dish combines sweet strawberries, crisp cucumbers, nutty quinoa and peppery arugula with crunchy pistachios and creamy ricotta salata for a flavor and texture combination that’s absolutely irresistible. But the real star? Ereka’s homemade mint vinaigrette, which brings everything together with bright, refreshing notes of fresh mint, honey and orange juice. Ingredients

  • 2 cups strawberries, chopped
  • 2 cups cucumbers, chopped
  • 1 cup quinoa or farro, cooked, at room temp.
  • 1/2 cup pistachios, chopped
  • 1/2 cup fresh mint
  • 1/2 cup ricotta salata, feta or goat cheese, crumbled
  • 12 oz. arugula
  • 1/3 cup olive oil
  • 2 Tbs. white wine vinegar
  • 2 Tbs. honey
  • 1/2 small shallot
  • 1/2 tsp. Dijon mustard
  • 1/4 cup orange juice
  • 3 Tbs. fresh mint
  • 1/2 tsp. kosher salt

Add all of the salad ingredients to a large bowl.

 

Add all of the vinaigrette ingredients to a blender and blend on high until the dressing is smooth.

Pour mint vinaigrette over salad and toss gently until all the ingredients are evenly coated. Serve immediately and enjoy!
