Ingredients
- 1 Tbs. garlic salt
- 5 large assorted color peppers
- 12 cup uncooked white rice
- 2 Tbs. olive oil + additional
- 1 medium yellow onion, chopped
- 1/4 tsp. celery salt
- 4 garlic cloves, finely chopped
- 1/4 cup beef stock
- 1 lb. ground turkey or venison
- 1 (15 oz.) can petite diced tomatoes
- 1 (10–12 oz.) bag frozen riced cauliflower, cooked
- Salt and pepper, to taste
- 1/2 cup crumbled feta + additional
- 1 Tbs. dried cilantro
Instructions
PrintHeat oven to 350°F. Bring large pot of water to boil. Add garlic salt. Meanwhile, slice tops off peppers and scoop out and discard ribs and seeds. Chop and reserve excess flesh around stems and discard stems. Boil pepper cups in seasoned water until they have a little bend to them, about 5 min. Use tongs to remove peppers and let drain upside down on paper towels.
Add a cup of the seasoned water to small pot; bring to boil. Add white rice, cover tightly, and reduce heat to low. Simmer 20 min. or until tender. Heat oil in large, deep skillet over medium. Add onion, chopped peppers and celery salt and cook until tender, about 4 min. Stir in garlic and cook until fragrant, about 1 min. Set veggies aside in a bowl and deglaze pan with stock, loosening up any browned bits in pan with your spoon.
Add meat and Southwest Seasoning to pan. Cook, stirring, until browned, 5 min. Stir in tomatoes, vegetables, cooked rice and cauliflower rice. Season with salt and pepper. Stir in feta and cilantro. Stuff peppers with mixture, sprinkle with additional feta and put in a baking dish. Bake 20 min.
Mix 1 Tbs. chili powder, 1 1/2 tsp. cumin, 1 tsp. each garlic powder, black pepper and sugar with 1/2 tsp. paprika and 1/4 tsp. each cayenne and oregano.
