Turkey and Veggie Packets Recipe Has All the Flavor of a Juicy Burger With Just 273 Calories

Who doesn’t love biting into a juicy burger? And bacon cheddar burgers are one of my favorites! But sometimes I want something that’s just a little healthier yet still satisfies that craving. If you’re like me, then you have to try this Turkey and Veggie Wraps recipe. With only 273 calories and 13 grams of fat, you can sink your teeth into one of these delectable bites almost guilt-free.

Instead of forming beef into patties, we cook ground turkey mixed with spices, peppers and grated squash. Zucchini has many health benefits including boosting your vision and keeping your heart healthy, and it helps make a dish extra-filling for just a few calories. The one hitch: It tends to release lots of juices so be sure to squeeze it dry before adding to your meat mixture. The best way to to that? Wrap the grated squash in a clean kitchen towel, then wring it over a bowl. The towel will absorb most of the liquid without creating a mess.

Ingredients

  • 1 Tbs. olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground turkey
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • ¼ tsp. salt
  • 1 red pepper, diced
  • 1 zucchini, grated, squeezed dry
  • 1/3 cup chopped fresh cilantro + additional leaves
  • 1 Tbs. lime juice
  • 1 tsp. grated lime zest
  • 6 burrito-size flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • Lime wedges and sour cream (optional)

In large skillet, heat oil over medium heat; add onion. Cook, stirring occasionally, until softened, 7–8 min. Add garlic; cook 30 sec. 

Add ground turkey, cumin, chili powder and salt; cook, stirring occasionally and breaking up meat, until turkey is no longer pink, 8–10 min. Add red pepper; cook, stirring, until softened, about 5 min. Add zucchini; cook, stirring, 2 min. Remove from heat; stir in 1/3 cup cilantro, lime juice and lime zest. 

Spoon turkey mixture over 1/3 of each tortilla, leaving 2" border around side. Top with cheese. Fold side over filling; roll up to enclose. Place, seam side down, on surface; flatten. 

Coat skillet with cooking spray; heat over medium-low heat. In batches, cook packets, flipping once, until golden and heated through, 2–3 min. per side. If desired, serve with lime and sour cream; top with cilantro.
