Deliciously Simple Mixed Greens Salad Recipe Is The Perfect Accompaniment To Any Meal

A green salad is a refreshing accompaniment to any meal. And if your looking for something extra-special, then you have to try this Mixed Greens Salad recipe. There’s a genius trick that takes it over the top. Simply rub the inside of your bowl with a clove of garlic before layering in the other ingredients. The aromatic adds a subtle hint of spice without overpowered the tender greens. Then whisk together an easy from-scratch vinaigrette with a pinch of mustard powder to finish the dish.

Babs’ tip: To make your own croutons, cut 2 slices of ciabatta bread into cubes. In medium skillet, heat 2 Tbs. oil and small whole clove garlic until hot. Add bread; cook, stirring often, until bread cubes are golden on all sides. Drain on paper towels.

Ingredients

  • 1 head romaine lettuce
  • 1 clove garlic
  • 2/3 cup arugula
  • 2 cucumbers
  • 6 Tbs. olive oil
  • 2 Tbs. red wine vinegar
  • 1/2 lemon, juiced
  • 1/2 tsp. mustard powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Croutons (optional)

Tear romaine lettuce into bite-size pieces. Rub inside of large bowl with garlic clove; add romaine and arugula. Using fork, score deep lengthwise grooves along cucumbers; cut into thin slices. Add cucumbers to greens in bowl.

In separate bowl, whisk together olive oil, red wine vinegar, lemon juice, mustard powder, salt and pepper until combined. Drizzle desired amount over greens. If desired, top with croutons.
